Begin before dawn at the milking parlour, where our 200+ indigenous Gir and Sahiwal cows line up for their morning milking. Watch the plate chillers bring fresh milk from 34ยฐC to 4ยฐC in twenty minutes. See our on-farm mini-lab in action โ the Milkana tests, the somatic cell count, the fat and protein readings that determine if a batch passes.
Then move to the processing room: watch pasteurisation, bottling, and labelling. At 6:30 AM, sit down to a farm breakfast โ the same milk you just saw collected, poured hot into chai over a wood fire, with fresh paneer bhurji on ghee-fried bread.
